For my own curiosity, I will find some 10 pair to pull apart to see how to identify how the whites pair with the coloured conductors. Have you triple checked (again) that you don't have a split pair somewhere between the 2 ends of your link. and end near the NBN modem.
Have you tried swapping ends with the SFP modules.
If you are in Melbourne (and you can figure a way of getting them to you)
I have a Planet vc231G VDSL2 bridge, and a draytek VDSL2 modem 2760VN that seems to work well with the vc231G bridge. I think (but don't know) that these should be somewhat compatible operating near an NBN connection The draytek modem/router has the recommended NBN firmware on it.
The vc231G does g.vector, and g.inp which NBN wants/uses. My guess is the vc231g spec is likely very similar to the Proscend unit, (but could be completely wrong)
You could perhaps loan these, and see if things are different/better/worse...

As soon as we started moving any volume of traffic across the 10Mbps link, the NBN VDSL died again.

Some progress in the saga in case anyone finds this useful.
We earthed all the unused pairs in the 10 pair cable and established a 10Mbps FD link, and the NBN stayed up.
